  • 1.5 lbs Chicken Thighs boneless, skinless, cut into 1-inch pieces
  • 1.5 cups Uncooked Long-Grain White Rice jasmine or basmati
  • 2 cups Chicken Broth or Water
  • 3/4 cup Teriyaki Sauce good quality
  • 2 tablespoons Soy Sauce low sodium preferred
  • 1 tablespoon Honey or Brown Sugar
  • 2 cloves Garlic minced (or 1 tsp garlic powder)
  • 1 teaspoon Fresh Ginger grated (or 1/2 tsp ground ginger)
  • 1 teaspoon Sesame Oil
  • Salt To taste
  • Black Pepper To taste
  • Green Onions For garnish, sliced (optional)
  • Sesame Seeds For garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and prepare a 9x13 inch baking dish.
  • In a large bowl, combine the chicken thighs with 1/2 cup teriyaki sauce, soy sauce, honey, garlic, ginger, sesame oil, salt, and pepper; mix well to coat the chicken.

Baking

  • Spread the uncooked rice evenly in the baking dish, then pour chicken broth over the rice. Gently arrange the chicken mixture over the rice and broth without stirring.
  • Cover the dish tightly with foil and bake for 30 minutes.
  • Remove the foil, drizzle the remaining 1/4 cup teriyaki sauce over the chicken and rice, and stir gently to combine.
  • Return the uncovered dish to the oven and bake for another 15-20 minutes, or until the chicken is cooked through and the rice is tender.

Serving

  • Let the dish rest for 5-10 minutes after removing it from the oven, then garnish with green onions and sesame seeds before serving.

Notes

For extra flavor, marinate the chicken for at least 30 minutes or up to a few hours in advance. Adjust the amount of teriyaki sauce to your preference, and feel free to add vegetables like broccoli florets or sliced bell peppers during the last 15 minutes of baking for a more complete meal.
