Elegant Lemon Herb Roasted Chicken with Seasonal Vegetables

  • 2 bone-in, skin-on chicken breasts
  • 1 lemon
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 lb small new potatoes
  • 1/2 lb green beans
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chicken broth

Preparation

  • Pat chicken breasts dry and tuck lemon slices, rosemary, thyme, and smashed garlic under the skin.
  • Rub chicken with 1 tablespoon olive oil, season with salt and pepper, and toss halved new potatoes with remaining olive oil, salt, and pepper.

Cooking

  • Preheat oven to 400°F (200°C) and arrange chicken and potatoes on a baking sheet to roast for 25 minutes.
  • Remove pan, add trimmed green beans, toss in drippings, and pour in chicken broth.
  • Return to oven and roast for 15-20 minutes until chicken is cooked through and vegetables are tender and lightly caramelized.

Serve

  • Rest chicken for 5 minutes, then serve with roasted potatoes, green beans, and pan juices.

Notes

For extra crisp skin, broil the chicken for the last few minutes of cooking, watching carefully to prevent burning. Adjust herbs to your liking; fresh oregano or sage would also be delicious.
