  • 6-8 slices day-old bread, cubed (sourdough, brioche, or white bread)
  • 1 lb breakfast sausage, cooked and crumbled, or 8-10 slices bacon, cooked and crumbled
  • 8 large eggs
  • 2 cups milk (whole, 2%, or unsweetened almond milk)
  • 1.5 cups shredded cheddar cheese (or a blend of your favorites)
  • 1/2 small onion, finely diced
  • 1/2 red bell pepper, finely diced (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Butter or oil for greasing the baking dish for greasing the baking dish

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Arrange cubed bread in the prepared dish, then scatter cooked sausage or bacon, diced onion, and bell pepper over the bread.

Assemble Casserole

  • In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder until well combined.
  • Pour the egg mixture over the bread and sausage, gently pressing the bread to ensure it absorbs the liquid.
  • Sprinkle 1 cup of shredded cheese evenly over the top of the casserole.

Bake and Serve

  • Bake for 30-35 minutes, or until the casserole is set and golden brown.
  • During the last 5-10 minutes, sprinkle the remaining 1/2 cup of cheese and continue baking until melted and bubbly.
  • Let the casserole rest for 5 minutes before serving.

Notes

For best results, use day-old bread as it absorbs the egg mixture better. You can prepare this casserole the night before and bake it in the morning. Customize with your favorite vegetables or cheeses!
