  • 1 pound large shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup steamed broccoli florets or snap peas

Sauce

  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sriracha adjust to your spice preference
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Other

  • 1 tablespoon olive oil or sesame oil

Optional Garnishes

  • chopped green onions
  • sesame seeds
  • wedge of lime

Instructions

  • Cook rice according to package directions if you don't have it prepared.
  • Whisk together soy sauce, rice vinegar, honey, sriracha, ginger, and garlic for the sauce.
  • Heat oil in a skillet, then cook shrimp for 2-3 minutes per side until pink and opaque.
  • Pour the sauce over the cooked shrimp and simmer for 1-2 minutes until slightly thickened.
  • Divide rice among bowls and top with saucy shrimp and steamed vegetables.
  • Garnish with green onions, sesame seeds, and lime, then serve immediately.

Notes

You can adjust the amount of sriracha to your liking for more or less spice. Feel free to use different vegetables such as bell peppers or snow peas.
