  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

  • Add shredded turkey or ham; cook for 2-3 minutes until heated through.
  • Stir in spinach or mixed greens and cook until slightly wilted.
  • Whisk eggs with salt and pepper in a small bowl.
  • Pour eggs over skillet mixture; cook for 1-2 minutes until edges set.
  • Sprinkle cheddar cheese evenly over the top.
  • Cover and cook for 3-5 minutes until eggs are set and cheese is melted.
  • Carefully slide the bowl onto a plate.
  • Garnish with desired toppings and serve immediately.
