  • 1.5 lbs chicken hearts
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked paprika
  • 1-2 teaspoons cayenne pepper
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Wooden or metal skewers

Instructions
 

Preparation

  • Rinse chicken hearts under cold water and trim any visible connective tissue or excess fat, then pat them dry.
  • Combine cumin, paprika, cayenne, garlic powder, black pepper, salt, olive oil, and lemon juice to form a paste, then toss with chicken hearts to coat thoroughly.

Marinating & Grilling

  • Refrigerate the marinated chicken hearts for 30 minutes to 2 hours.
  • Thread marinated chicken hearts onto pre-soaked wooden or metal skewers, ensuring even spacing.
  • Preheat grill to high and lightly oil grates; grill skewers over direct heat for 2-3 minutes per side until charred and cooked through.
  • Alternatively, set up grill for indirect heat and place skewers on the cooler side for 8-10 minutes, flipping halfway, finishing with a minute or two over direct heat for char.
  • For a smoky sear, preheat a cast iron skillet on the grill over high heat; add oil and cook skewers in the skillet for 3-4 minutes per side until seared and cooked.
  • For tender results, place skewers in a heavy-duty aluminum foil packet with a splash of water or broth, seal, and grill over medium-high direct heat for 10-12 minutes, flipping halfway.

Serving

  • Remove skewers from the grill and let them rest for 2-3 minutes before serving.

Notes

Adjust cayenne pepper to your desired heat level. Soaking wooden skewers prevents them from burning on the grill. Ensure chicken hearts are cooked through; they should be firm and slightly springy to the touch. Serve immediately with your favorite side dishes.
