Main Ingredients

  • 2 pounds Tater Tots one standard bag
  • 2 cups Shredded Cheese Monterey Jack or a Mexican blend, freshly shredded
  • 6 large Scrambled Eggs scrambled and seasoned
  • 1 pound Cooked Breakfast Sausage crumbled and cooked, or bacon bits
  • 1/4 cup Green Onions chopped

For Serving (optional)

  • Hot Sauce
  • Sour Cream

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Arrange the tater tots in a single layer on a large baking sheet and bake for 20-25 minutes, or until golden brown and crispy, optionally flipping them halfway through.
  • While the tots bake, prepare the scrambled eggs, cook the breakfast sausage or bacon bits, and chop the green onions.

Assembly

  • Once the tots are crispy, remove the baking sheet from the oven and evenly sprinkle half of the shredded cheese over them, then add the scrambled eggs, cooked sausage/bacon bits, and chopped green onions, finally sprinkling the remaining cheese over everything.
  • Return the baking sheet to the oven and bake for another 5-10 minutes until the cheese is completely melted and bubbly, or broil for 1-3 minutes for speedier melting and browning, watching carefully.
  • Carefully remove the baking sheet from the oven, then dollop with sour cream and drizzle with hot sauce if desired.

Serving

  • Serve immediately while hot and gooey.

Notes

For an extra kick, consider adding a pinch of red pepper flakes to the scrambled eggs or a dash of your favorite hot sauce to the finished nachos.
