Ingredients
  

For the Peach Filling

  • 6-8 about 6 cups ripe medium-sized peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour or cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • salt Pinch
  • 1 tablespoon lemon juice freshly squeezed is best

For the Biscuit Topping

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into small cubes 1 stick
  • ½ cup milk whole milk or buttermilk for richer flavor
  • 1 large egg
  • 1 teaspoon vanilla extract

For Finishing

  • 1 tablespoon turbinado sugar for sprinkling on top
  • 1 tablespoon unsalted butter, melted for brushing

Instructions
 

Preparation

  • Toss sliced peaches with sugars, flour, vanilla, spices, salt, and lemon juice in a large bowl.
  • Let the peach mixture sit for 15-20 minutes to release juices while preparing the topping.
  • Preheat oven to 375°F (190°C) and lightly butter a 9x13 inch or 2-quart baking dish.

Make the Topping

  • Whisk together flour, granulated sugar, baking powder, and salt in a separate medium bowl.
  • Cut cold, cubed butter into the flour mixture until it resembles coarse crumbs with pea-sized butter pieces.
  • In a small bowl, whisk milk, egg, and vanilla extract, then gently stir into the dry ingredients until just combined.

Assembly and Baking

  • Pour the peach mixture evenly into the prepared baking dish.
  • Spoon large dollops of the cobbler topping over the peach filling.
  • Brush the biscuit dough with melted butter and sprinkle with turbinado sugar.
  • Bake for 35-45 minutes until the filling is bubbly and the topping is golden brown.
  • Cool for at least 15-20 minutes before serving to allow the filling to set.

Notes

For extra flavor, try adding a splash of bourbon or brandy to the peach filling. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
