Brownie Batter

  • 1 cup Unsalted Butter (2 sticks), melted
  • 12 oz Good Quality White Chocolate chopped (baking bars or callets work best, not chips)
  • 1 ½ cups Granulated Sugar
  • 3 Large Eggs at room temperature
  • 2 teaspoons Vanilla Extract (pure vanilla, please!)
  • 1 cup All-Purpose Flour
  • ½ teaspoon Salt

  • Preheat your oven to 325°F (160°C) and line a 9x13-inch baking pan with parchment paper, allowing for an overhang, then lightly grease it.
  • Combine melted unsalted butter and chopped white chocolate in a microwave-safe bowl, heating in 30-second intervals until smooth.
  • Whisk granulated sugar into the butter and white chocolate mixture for about 1 minute until glossy.
  • Beat in the eggs one at a time, then stir in vanilla extract until the mixture is thick and glossy.
  • In a separate bowl, whisk together the all-purpose flour and salt.
  • Gently fold the dry ingredients into the wet ingredients with a spatula until just combined, being careful not to overmix.
  • Pour the batter into the prepared pan and bake for 25-30 minutes, or until the edges are set and a toothpick comes out with moist crumbs.
  • Allow the brownies to cool completely in the pan on a wire rack before lifting, cutting into squares, and serving.

Notes

For the best fudgy texture, ensure not to overbake; the center should appear slightly soft. Cooling completely is essential for easy cutting and optimal texture. Enjoy with a glass of milk or a scoop of ice cream!
