  • 1/2 cup Skim Milk (or unsweetened almond milk)
  • 1 lb Lean Ground Turkey Sausage
  • 5 oz Spinach (fresh, chopped)
  • 1 large Bell Peppers (any color, diced)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1/2 cup Reduced-Fat Shredded Sharp Cheddar Cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Fresh Chives (chopped, for garnish)

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with cooking spray.
  • In a large skillet, brown the lean ground turkey sausage over medium heat, then drain excess fat and transfer it to the prepared baking dish.
  • Using the same skillet, sauté the diced onion and bell peppers until softened; then add minced garlic and spinach, cooking until the spinach wilts.
  • Spread the cooked vegetables evenly over the sausage in the baking dish.
  • In a large bowl, whisk together eggs, skim milk, salt, and pepper until well combined.
  • Pour the egg mixture over the sausage and vegetables, then sprinkle with reduced-fat shredded cheddar cheese.
  • Bake for 30-35 minutes until the casserole is set and golden brown, and a knife inserted comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving, garnishing with fresh chopped chives.

Notes

For an extra flavor boost, try adding a pinch of red pepper flakes to the vegetables while sautéing. You can also customize the vegetables based on what you have on hand, such as mushrooms or zucchini. This casserole is perfect for meal prepping, as it reheats well and can be enjoyed throughout the week.
