Ingredients
  

For the Cookies

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

For the Latte Glaze

  • 2 cups powdered sugar
  • 3-4 tablespoons brewed espresso or strong coffee
  • 1/2 teaspoon vanilla extract

Instructions
 

Baking the Cookies

  • Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl, then set aside.
  • Cream softened butter and both sugars in a large bowl until light and fluffy using an electric mixer.
  • Beat in the egg, molasses, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  • Cover the dough and chill for at least 30 minutes.
  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Roll dough into 1-inch balls, place them 2 inches apart on prepared baking sheets, and flatten slightly.
  • Bake for 8-10 minutes until edges are set but centers are still soft.
  • Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Making the Glaze and Finishing

  • Whisk together powdered sugar, espresso, and vanilla extract in a small bowl until smooth (add more espresso if needed).
  • Drizzle or spread the glaze over the cooled cookies, then let it set before serving.

Notes

For an extra touch, sprinkle a tiny pinch of ground cinnamon or nutmeg over the wet glaze before it sets. Ensure your butter is properly softened for the best cookie dough texture. Do not overbake the cookies to keep them soft and chewy.
