  • 2 cups prepared mashed potatoes (cold, if using leftovers)
  • 1 large egg
  • 1/2 cup shredded cheddar cheese (or Gruyère, Monterey Jack, or a blend)
  • 1/4 cup finely chopped green onions (scallions)
  • 2 tablespoons all-purpose flour (gluten-free flour can be substituted)
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

  • Non-stick cooking spray or a little melted butter/oil for greasing the baking sheet

  • Preheat your oven to 400°F (200°C) and grease a baking sheet with non-stick spray, melted butter, or line it with parchment paper.
  • In a large bowl, gently combine the mashed potatoes, egg, cheddar cheese, green onions, flour, garlic powder, salt, pepper, and paprika, mixing until just incorporated.
  • Scoop 1 to 1.5 tablespoon portions of the mixture onto the prepared baking sheet, forming small balls or rustic dollops and leaving space between each.
  • Bake for 20-25 minutes, or until the potato puffs are golden brown and slightly crispy.
  • Remove from the oven, let them cool for a minute or two, and serve warm.

Notes

For extra crispiness, you can broil the puffs for 1-2 minutes at the end of baking, watching them closely to prevent burning. These puffs are also great for a crowd and can be prepared ahead of time and refrigerated before baking. Just add a few extra minutes to the bake time if baking from cold.
