Ingredients
  

Fritter Batter

  • 2-3 medium ripe bananas the spottier, the better
  • 1 cup All-Purpose Flour
  • 1/4 cup Granulated Sugar adjusted to preference
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • large Egg
  • 1/4 cup Milk any kind
  • 1 teaspoon Vanilla Extract

For Frying and Serving

  • 2-3 cups Vegetable Oil or other neutral oil, for frying
  • Powdered Sugar for dusting, optional

Instructions
 

Preparation

  • Mash the ripe bananas in a medium bowl with a fork until mostly smooth, leaving a few small lumps.
  • In a separate large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  • In a small bowl, whisk the egg, milk, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
  • Fold the mashed bananas into the batter until evenly distributed.

Cooking

  • Pour 2-3 inches of vegetable oil into a large, heavy-bottomed pot or deep skillet and heat to approximately 350°F (175°C).
  • Carefully drop spoonfuls of batter into the hot oil, frying in batches to avoid overcrowding.
  • Cook for 2-3 minutes per side until golden brown and cooked through, ensuring they puff up nicely.
  • Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Serving

  • Dust generously with powdered sugar while warm, if desired, and serve immediately.

Notes

For best results, use very ripe, spottier bananas as they are sweeter and easier to mash. Do not overcrowd the pan while frying to maintain oil temperature and ensure even cooking. The fritters are best served warm immediately after dusting with powdered sugar.
