  • 1 sheet frozen puff pastry thawed
  • 4 oz brie cheese rind on, cut into small pieces
  • 1/4 cup whole berry cranberry sauce (canned or homemade)
  • 1 tablespoon fresh rosemary finely chopped (optional, for garnish)
  • Cooking spray or parchment paper

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and grease a mini muffin tin or line it with parchment paper.
  • Unroll the thawed puff pastry on a lightly floured surface and gently stretch it out slightly with a rolling pin.
  • Cut the puff pastry into 12 equal squares.
  • Press each pastry square into a muffin tin cup, then add a small piece of brie and a spoonful of cranberry sauce to each.

Baking

  • Bake for 12-15 minutes, until the pastry is golden brown and puffed, and the brie is melted and bubbly.

Serving

  • Cool in the muffin tin for a few minutes before carefully removing. Garnish with fresh rosemary if desired, and serve warm.

Notes

For best results, ensure the puff pastry is fully thawed but still cold before working with it. You can prepare these ahead of time and bake just before serving for a warm, fresh appetizer.
