  • 4 oz brie cheese
  • 1/2 cup fresh blueberries
  • 1 tbsp fresh thyme leaves, roughly chopped
  • 1 tbsp olive oil
  • A pinch sea salt
  • A pinch black pepper

Optional Garnish

  • Drizzle honey or balsamic glaze for serving

Preparation

  • Preheat your oven to 400°F (200°C) and prepare the brie by trimming the rind if desired, then cutting it into small slices or cubes.

Assemble

  • Place the flatbread on a baking sheet and drizzle with olive oil, spreading it evenly.
  • Arrange brie slices and fresh blueberries over the flatbread, nestling them together.

Season and Bake

  • Sprinkle chopped thyme leaves, sea salt, and black pepper over the flatbread.
  • Bake for 10-15 minutes, or until the crust is golden, brie is melted, and blueberries burst, monitoring to prevent over-browning.
