Ingredients
  

Flatbread

  • 1-2 large or small pre-made flatbreads naan, pita, or thin Italian-style

Toppings

  • 4-6 ounces brie cheese rind on, sliced into thin pieces or small chunks
  • 1/2 cup cranberries fresh or dried, or a mix

Drizzle & Garnish

  • 1-2 tablespoons honey or balsamic glaze for drizzling
  • 1 sprig fresh rosemary or thyme for garnish, optional
  • flaky sea salt optional
  • black pepper optional
  • 1 teaspoon sugar optional, for fresh cranberries

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C); if using a pizza stone, place it in the oven to preheat for a crispier crust.

Assembly

  • Place the flatbreads on a parchment-lined baking sheet or directly on a preheated pizza stone.
  • Evenly distribute the sliced brie over the flatbreads, leaving a small border.
  • Sprinkle cranberries over the brie; for fresh cranberries, toss with 1 tsp sugar and warm slightly before scattering.

Baking & Serving

  • Bake for 10-15 minutes until the brie is bubbly and melted, and the flatbread edges are golden brown.
  • After baking, optionally drizzle with honey or balsamic glaze, and sprinkle with fresh rosemary, thyme, sea salt, and black pepper.
  • Slice and serve immediately for the best experience.

Notes

For an extra touch, toast the flatbread lightly before adding toppings to enhance crispiness. If using fresh cranberries, warming them slightly mellows their tartness and helps them blend better with the brie.
