Ingredients
  

Pasta

  • 8 oz elbow macaroni or preferred pasta shape

Roux and Sauce

  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk, warmed
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper, freshly ground

Cheese

  • 1.5 cups sharp cheddar cheese, freshly shredded
  • 1 cup Gruyère cheese, freshly shredded

Flavor and Garnish

  • 2 tablespoons white truffle oil or to taste
  • 4 oz wild mushrooms (cremini, shiitake, or mix), sliced
  • 1 clove garlic, minced
  • fresh chives, for garnish optional, for garnish
  • Panko breadcrumbs, toasted optional, for topping

Instructions
 

Cooking Pasta

  • Bring salted water to a boil, cook macaroni until al dente, then drain without rinsing.

Sautéing Mushrooms

  • Melt 1 tablespoon of butter in a pan, sauté sliced mushrooms until softened, adding minced garlic during the last minute.

Making Roux and Béchamel

  • Melt remaining 3 tablespoons of butter, then whisk in flour for 1-2 minutes until a smooth roux forms.
  • Gradually whisk in warm milk until the sauce thickens to a smooth, creamy béchamel.

Adding Cheese and Truffle

  • Remove from heat, stir in Dijon mustard, salt, and pepper, then gradually add shredded cheddar and Gruyère until melted and smooth.
  • Stir in truffle oil, adjusting to your preferred flavor intensity.

Combining and Serving

  • Combine the cooked pasta and sautéed mushrooms with the cheese sauce, stirring gently to coat.
  • Serve immediately, optionally garnished with fresh chives and toasted Panko breadcrumbs.

Notes

For an extra golden crust, transfer the combined mac and cheese to a baking dish, top with extra shredded cheese and Panko breadcrumbs, and bake at 375°F (190°C) for 15-20 minutes, or until bubbly and golden.
