  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into 1-inch cubes
  • 0.5 medium fresh pineapple cored and cut into 1-inch chunks (or drained canned pineapple)
  • 1 small red onion cut into 1-inch pieces
  • 1-2 bell peppers (any color) cut into 1-inch pieces
  • 1 cup favorite BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon union powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions
 

Preparation

  • In a medium bowl, combine the chicken cubes with olive oil and seasonings; toss and marinate for at least 15 minutes in the refrigerator.
  • Thread chicken, pineapple, red onion, and bell pepper pieces onto skewers, ensuring not to overcrowd them.
  • Preheat your grill to medium-high heat (375-400°F / 190-200°C) and lightly oil the grates.
  • Place skewers on the hot grill and cook for 10-15 minutes, turning every 3-4 minutes, until the chicken reaches 165°F (74°C).
  • During the last 5 minutes, generously brush the kabobs with BBQ sauce and continue to grill until the sauce is caramelized and sticky.
  • Remove the kabobs from the grill and let them rest for a few minutes before serving to ensure tender chicken.

Notes

For best results, marinate the chicken for at least 30 minutes to an hour. If using wooden skewers, remember to soak them in water beforehand to prevent burning on the grill.
