  • 1 pound stale baguette or rustic white bread cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 cup celery chopped
  • 1 cup yellow onion chopped
  • 1 pound bulk mild Italian turkey sausage
  • 2 medium Honeycrisp apples cored and chopped
  • 1 tablespoon fresh sage chopped
  • 1 teaspoon fresh thyme chopped
  • 1/2 teaspoon fresh rosemary chopped
  • 2 cups chicken broth
  • 1/2 cup unsalted butter melted
  • 2 large large eggs lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Preparation

  • Preheat oven to 300°F (150°C), spread bread cubes on a baking sheet, and toast for 15-20 minutes until dried.
  • Heat olive oil in a large skillet, brown turkey sausage, drain fat, then add celery and onion and cook until softened.
  • In a large bowl, combine toasted bread, cooked sausage and vegetable mixture, chopped apples, and fresh herbs; toss gently.
  • Whisk together chicken broth, melted butter, beaten eggs, salt, and pepper in a separate bowl.
  • Pour the liquid over the bread and sausage mixture, folding gently until the bread is moistened, being careful not to overmix.
  • Transfer the stuffing mixture to a greased 9x13 inch baking dish.

Baking

  • Preheat oven to 375°F (190°C), cover the dish with foil, and bake for 30 minutes.
  • Remove foil and bake for an additional 20-30 minutes until the top is golden brown and crispy.
  • Let the stuffing rest for 10-15 minutes after baking before serving.

Notes

For best texture, ensure your bread is truly stale before toasting. Be careful not to overmix the stuffing once the liquid is added, as this can lead to a dense result.
