Hearty Beef & Potato Shipwreck Casserole

Ingredients
  

Main Ingredients

  • 1 pound ground beef
  • 1 large onion chopped
  • 3 carrots peeled and sliced
  • 4 potatoes peeled and thinly sliced
  • 1 can condensed cream of mushroom soup 10.75 ounce

Sauce & Seasoning

  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Topping (Optional)

  • 1 cup shredded cheddar cheese optional, for topping

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, brown the ground beef over medium heat, then drain excess fat.
  • Add chopped onion and sliced carrots to the skillet and cook until softened.

Assemble Casserole

  • Whisk together cream of mushroom soup, beef broth, garlic powder, salt, and pepper in a separate bowl.
  • Layer half of the sliced potatoes at the bottom of the prepared baking dish.
  • Spoon half of the beef and vegetable mixture over the potatoes.
  • Pour half of the soup mixture over the beef and vegetables.
  • Repeat the layers with the remaining ingredients.

Bake & Serve

  • If desired, sprinkle shredded cheddar cheese over the top of the casserole.
  • Cover and bake for 60 minutes, then uncover and bake for an additional 15-20 minutes until tender and browned.
  • Let the casserole rest for 10 minutes before serving.

Notes

For a richer flavor, you can sauté the beef and vegetables with a tablespoon of olive oil. Ensure potatoes are thinly sliced for even cooking. Adjust seasoning to your preference.
