Bread Layer

  • 6-8 slices day-old bread, cubed

Filling

  • 1 lb cooked breakfast sausage, crumbled and drained
  • 1 medium bell pepper (any color), finely chopped
  • 0.5 medium onion, finely chopped
  • 1.5 cups shredded sharp cheddar cheese

Egg Mixture

  • 6-8 large eggs
  • 1.5 cups whole milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder

For Greasing

  • Butter for greasing the baking dish

Instructions
 

Preparation

  • Grease a 9x13 inch baking dish with butter and spread the cubed bread evenly across the bottom.
  • Sprinkle the cooked sausage, chopped bell pepper, and chopped onion over the bread.
  • Distribute half of the shredded cheddar cheese over the ingredients.
  • In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  • Pour the egg mixture evenly over the casserole ingredients, ensuring the bread is moistened.
  • Sprinkle the remaining cheddar cheese over the top.
  • Cover and refrigerate for at least 30 minutes, or preferably overnight, to allow flavors to meld.

Baking

  • Preheat oven to 375°F (190°C), then remove the casserole from the refrigerator and uncover.
  • Bake for 45-60 minutes, until puffed, golden brown, and a knife inserted into the center comes out clean.
  • Let the casserole rest for 5-10 minutes.

Notes

For best results, prepare the casserole the night before and let it soak overnight in the refrigerator. This allows the bread to fully absorb the egg mixture, resulting in a more tender and flavorful casserole. Adjust the amount of salt based on the saltiness of your breakfast sausage. Any leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days and reheated. Feel free to add other vegetables like spinach or mushrooms for extra flavor and nutrition.
