  • 1 tbsp olive oil
  • medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 2 cups beef broth (or chicken broth)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup long-grain white rice, uncooked
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried Italian seasoning
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 cups shredded Cheddar cheese (or your favorite melting cheese)

  • Fresh parsley, chopped

  • In a large oven-safe pot or Dutch oven, brown the ground beef over medium-high heat, breaking it up and draining any excess fat.
  • Add the chopped onion to the pot and cook until softened, then stir in the minced garlic for another minute until fragrant.
  • Pour in both condensed soups, beef broth, undrained diced tomatoes, uncooked rice, Worcestershire sauce, and Italian seasoning, stirring until well combined.
  • Bring to a gentle boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed; season with salt and pepper.
  • Preheat the oven broiler, then sprinkle shredded Cheddar cheese evenly over the cooked casserole.
  • Place the pot under the broiler for 3-5 minutes until the cheese is melted, bubbly, and lightly golden.
  • Carefully remove from the oven, garnish with fresh parsley if desired, and let rest a few minutes before serving.

Notes

For a richer flavor, you can use a combination of different cheeses, such as Monterey Jack or Colby. To make this a one-pot meal, ensure your pot is truly oven-safe for broiling. Remember to adjust seasoning to your preference!
