  • 1.5 lbs Boneless, Skinless Chicken Breasts or Thighs cut into 1-inch pieces
  • 1-2 tablespoons Olive Oil
  • 1 packet (about 1 ounce) Ranch Seasoning Mix
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt and Black Pepper to taste
  • 1 cup Chicken Broth low sodium recommended
  • 1/2 cup Heavy Cream
  • 2 ounces Cream Cheese softened and cut into cubes
  • 1/2 cup Shredded Cheddar Cheese or a blend, for topping
  • Fresh Parsley or Chives for garnish (optional)

  • Prepare the chicken by patting it dry and tossing with olive oil, half the ranch seasoning, garlic powder, onion powder, salt, and pepper.
  • Sear the seasoned chicken in an oven-safe skillet over medium-high heat for 3-4 minutes per side until golden, then remove and set aside.
  • Reduce heat to medium, add chicken broth to the skillet, scraping up browned bits, then stir in remaining ranch seasoning, heavy cream, and softened cream cheese until smooth.
  • Bring the sauce to a gentle simmer, return the seared chicken to the skillet, and simmer for 5-7 minutes until the chicken is cooked through and the sauce thickens.
  • Sprinkle shredded cheese over the chicken and sauce, then either cover to melt or broil for 1-2 minutes until bubbly and golden.
  • Remove from heat, garnish with fresh parsley or chives if desired, and serve hot.

Notes

For extra flavor, consider marinating the chicken in the seasoning for 30 minutes before cooking. If you don't have an oven-safe skillet, transfer the chicken and sauce to a baking dish before broiling the cheese. Adjust ranch seasoning and salt to your taste; some seasoning mixes can be quite salty.
