  • 1.5 - 2 lbs boneless, skinless chicken thighs or breasts
  • 1 onion chopped
  • 2 carrots peeled and sliced
  • 3-4 potatoes peeled and cubed
  • 1 bell pepper (any color) chopped
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup chicken broth
  • 2 cloves garlic minced
  • 1 tsp dried Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish, optional)

  • Place the chopped onion, sliced carrots, cubed potatoes, and chopped bell pepper evenly at the bottom of your slow cooker.
  • Lay the chicken thighs or breasts over the vegetables.
  • Sprinkle the minced garlic, Italian seasoning, paprika, salt, and pepper over the chicken and vegetables.
  • Pour the can of diced tomatoes with their liquid and the chicken broth over everything in the crockpot.
  • Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  • If using chicken breasts, you can shred the cooked chicken with two forks directly in the slow cooker before serving.
  • Ladle the chicken and vegetables into bowls, garnishing with fresh parsley if desired.

This recipe is easily adaptable to your favorite vegetables. Feel free to add ingredients like celery, mushrooms, or green beans.
