  • 2 tablespoons olive oil
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 2 medium potatoes peeled and diced
  • 1 can diced tomatoes (14.5 ounce), undrained
  • 6 cups vegetable broth
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • ½ teaspoon salt (or to taste)
  • 1 cup chopped green beans (fresh or frozen)
  • 1 cup frozen corn
  • ½ cup fresh parsley chopped (optional)

  • Heat olive oil in a large skillet, then sauté the chopped onion for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
  • Transfer the sautéed onion and garlic to the crockpot. Add the diced carrots, celery, potatoes, undrained diced tomatoes, and vegetable broth.
  • Stir in Italian seasoning, dried thyme, black pepper, and salt. Mix all ingredients thoroughly.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until vegetables are tender.
  • About 30 minutes before serving, stir in the green beans and frozen corn. Continue cooking until they are heated through and tender-crisp.
  • Taste and adjust seasoning if needed, then ladle into bowls and garnish with fresh parsley, if desired.

Notes

Sautéing the aromatics at the beginning adds a depth of flavor to the soup, but if you are short on time, you can skip this step and add them directly to the crockpot. You can also customize this soup with other winter vegetables like parsnips, turnips, or butternut squash. For a creamier soup, blend a portion of it before adding the green beans and corn.
