  • 6 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1 tablespoon cooking oil (coconut, olive, or vegetable)
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped onion
  • 1/2 cup cooked and crumbled breakfast sausage or bacon optional
  • Salt and black pepper to taste
  • 6-8 large flour tortillas (whole wheat or regular)
  • 1 cup shredded cheddar cheese (or your family's favorite)

Instructions
 

Preparation

  • Heat cooking oil in a non-stick skillet over medium heat, then sauté chopped bell peppers and onion for 5-7 minutes until softened.
  • If using, add cooked sausage or bacon to the pan with the vegetables to warm through.
  • In a medium bowl, whisk eggs and milk with salt and pepper.
  • Pour the egg mixture into the skillet with the vegetables and meat, cooking and stirring gently until the eggs are set but still moist.

Assembly

  • Warm tortillas according to package directions using a microwave or dry skillet.
  • Lay a warm tortilla flat, spoon a portion of the egg and veggie scramble onto the center, and sprinkle with shredded cheese.
  • Fold in the two opposite sides of the tortilla, then fold up the bottom edge and roll tightly from bottom to top.

Serving and Storage

  • Serve the breakfast burritos immediately with optional toppings like salsa, sliced avocado, or sour cream.
  • For leftovers, wrap individual burritos tightly in foil, place in a freezer-safe bag, and freeze for 1-2 months; reheat from frozen in microwave or oven.
