  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced into 1/2 inch cubes
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 cup beef broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 5 oz fresh spinach
  • 1/2 cup shredded mozzarella cheese (optional)

  • Heat olive oil in a large skillet over medium-high heat, then add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat from the skillet.
  • Add the chopped onion and minced garlic to the skillet and cook for 5-7 minutes until the onion is softened.
  • Stir in the diced potatoes, undrained diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
  • Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes until potatoes are tender, stirring occasionally.
  • Stir in the fresh spinach a handful at a time, allowing it to wilt before adding more. Once all spinach is wilted, cook for another 2-3 minutes.
  • If desired, sprinkle with shredded mozzarella cheese, cover briefly until melted, then serve hot.

Notes

This recipe is a complete meal on its own, but you can serve it with a side salad or crusty bread. For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning.
