  • 1 tbsp olive oil
  • 1 lb lean ground turkey 93/7 or 90/10
  • 1 medium yellow or white onion finely chopped
  • 3 cloves garlic minced
  • 1 (6 oz) can tomato paste
  • 1 (14.5 oz) can fire-roasted diced tomatoes undrained
  • 2 cups low-sodium chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning or 1/2 tsp dried oregano + 1/2 tsp dried basil
  • 2 medium Russet or Yukon Gold potatoes peeled and diced into 1/2-inch cubes
  • 1 cup frozen peas optional
  • Salt and freshly ground black pepper to taste
  • 1/2 cup shredded cheddar cheese optional, for topping

Cooking Steps

  • Heat a large skillet or Dutch oven over medium-high heat. Add olive oil and cook ground turkey for 5-7 minutes until browned, then drain fat and set aside.
  • Add a little more olive oil to the skillet if needed, then cook the chopped onion for 3-4 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
  • Add tomato paste to the skillet and cook for 1 minute, stirring constantly. Pour in diced tomatoes, chicken broth, Worcestershire sauce, and dried herbs; bring to a simmer, scraping up any browned bits.
  • Return the cooked ground turkey to the skillet and stir in the diced potatoes, ensuring they are mostly submerged in the liquid.
  • Reduce heat to medium-low, cover, and simmer for 15-20 minutes until potatoes are fork-tender, stirring occasionally.
  • If using, stir in frozen peas during the last 5 minutes of cooking. Season generously with salt and black pepper to taste.
  • Ladle into bowls and, if desired, sprinkle with shredded cheddar cheese to melt slightly before serving.

Notes

For extra flavor, you can brown the potatoes slightly before adding them to the sauce. This recipe is also great with a sprinkle of fresh parsley before serving.
