  • 1 pound lean ground turkey
  • 1 large onion chopped
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 6 cups chicken or vegetable broth
  • 1 can crushed tomatoes (14.5 ounce) (optional)
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste

Optional Add-ins

  • 1 cup small pasta (like ditalini or elbow macaroni) OR pre-cooked rice/quinoa
  • 1 cup frozen peas or corn

Cooking Steps

  • Heat olive oil in a large pot over medium-high heat, then brown the ground turkey, breaking it up and draining any excess fat.
  • Add chopped onion, carrots, and celery to the pot; cook for 5-7 minutes until softened, then stir in minced garlic for another minute until fragrant.
  • Pour in broth and optional crushed tomatoes, add Italian seasoning, salt, and pepper, then bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
  • If using pasta, add and cook per package directions; if using pre-cooked rice/quinoa, stir in during the last 5 minutes to heat through, along with any frozen peas or corn.
  • Taste the soup and adjust seasonings as needed before serving hot with your preferred toppings.

Notes

Customize your soup with various toppings such as grated Parmesan cheese, fresh herbs (parsley, cilantro), a dollop of sour cream or Greek yogurt, or a squeeze of fresh lemon juice for added brightness.
