Hearty Herb Crockpot Chicken and Potatoes

Main Ingredients

  • 1.5-2 lbs boneless, skinless chicken thighs or breasts
  • 2 lbs baby potatoes or regular potatoes cut into 1.5-inch chunks
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth low sodium
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and freshly ground black pepper to taste
  • fresh parsley chopped (for garnish, optional)

Instructions
 

Preparation

  • Wash and quarter baby potatoes, or cut larger potatoes into 1.5-inch pieces; chop onion and mince garlic.
  • Pat chicken dry; toss with 1 tbsp olive oil, ½ tsp salt, ¼ tsp pepper, ½ tsp dried rosemary, ½ tsp dried thyme, and all paprika until well coated.
  • Add potatoes and onion to the same bowl; drizzle with remaining 1 tbsp olive oil, minced garlic, ½ tsp salt, ¼ tsp pepper, ½ tsp dried rosemary, and ½ tsp dried thyme.
  • Toss everything together until potatoes and onions are evenly coated.

Cooking

  • Pour half of the chicken broth into the slow cooker, then spread seasoned potatoes and onions evenly.
  • Arrange seasoned chicken on top of the potatoes, then pour the remaining chicken broth over everything.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until chicken reaches 165°F (74°C) and potatoes are tender.

Serving

  • Once cooked, adjust seasoning if needed and garnish with fresh chopped parsley if desired.

Notes

For best results, make sure to not overcrowd the slow cooker. You can also add other vegetables like carrots or bell peppers for more variety. This dish is great for meal prepping and can be easily reheated.
