Ingredients
  

Meatloaf

  • 1.5 lbs Lean Ground Turkey 93% lean
  • 1 small Onion finely diced
  • 2 cloves Garlic minced
  • 1 medium Carrot finely shredded
  • 1 stalk Celery finely diced
  • 1/2 cup Rolled Oats uncooked
  • 1 large Egg
  • 1/4 cup Sugar-Free Tomato Sauce
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Italian Seasoning
  • 1/2 tsp Smoked Paprika
  • Salt and Freshly Ground Black Pepper to taste

Optional Glaze

  • 2 tbsp Ketchup
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Brown Sugar Substitute

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper for the mini loaves.
  • Optionally, sauté finely diced onion, celery, and carrot in a pan with olive oil for 5-7 minutes until softened, then add minced garlic and cook for another minute; let cool slightly.

Mixing

  • In a large bowl, combine ground turkey, either the sautéed vegetables or fresh, rolled oats, egg, tomato sauce, Worcestershire sauce, Italian seasoning, smoked paprika, salt, and pepper.
  • Mix all ingredients gently until just combined, being careful not to overmix.

Baking

  • Divide the mixture into 4-6 equal portions, shaping each into small, elongated mini loaves and placing them on the prepared baking sheet.
  • Optionally, whisk together ketchup, apple cider vinegar, and brown sugar substitute for a glaze, then brush a thin layer over each mini loaf.
  • Bake for 25-35 minutes, or until the internal temperature reaches 160°F (71°C) with a meat thermometer.

Finishing

  • Remove the meatloaf from the oven and let it rest for 5-10 minutes.
  • Allow the meatloaf to cool completely to room temperature before portioning into airtight containers with side dishes for refrigeration.

Notes

This recipe is great for meal prepping. You can customize the vegetables based on what you have on hand. For a spicier kick, add a pinch of cayenne pepper to the meatloaf mixture. Serve with your favorite roasted vegetables or a fresh salad for a complete meal. Store leftover meatloaf in airtight containers in the refrigerator for up to 3-4 days or freeze for longer storage.
