  • 1 tbsp olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 cup brown or green lentils rinsed
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 0.5 tsp ground cumin
  • Salt and black pepper to taste
  • 2 cups fresh or frozen spinach

Optional Topping

  • 0.5 cup shredded cheddar cheese for serving

Cooking Instructions

  • Heat olive oil in a large skillet and cook diced onion until softened.
  • Add minced garlic, diced carrot, and diced celery; cook until they begin to soften.
  • Stir in diced tomatoes, rinsed lentils, vegetable broth, oregano, and cumin, then bring to a boil.
  • Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender and liquid is absorbed.
  • Season with salt and black pepper to your taste.
  • Stir in spinach and cook for 2-3 minutes until wilted.
  • Serve hot, with optional shredded cheddar cheese.

Notes

For extra flavor, you can add a bay leaf to the skillet while simmering the lentils and remove it before serving. If you prefer a thicker consistency, you can mash a portion of the cooked lentils against the side of the skillet before stirring in the spinach.
