  • 1.5 lbs Ground Beef 85/15 or 90/10 lean
  • 2 Eggs large
  • 1/2 cup Almond Flour
  • 1/2 cup Onion finely chopped
  • 2 Garlic cloves, minced
  • 1 tbsp Worcestershire Sauce sugar-free if strictly low-carb
  • 1 tbsp Dijon Mustard
  • 1 tsp Italian Seasoning
  • Salt & Black Pepper to taste

For the Glaze

  • 1/4 cup Sugar-Free Ketchup
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Erythritol or Monk Fruit Sweetener or to taste

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish or line a baking sheet with parchment paper, or use a broiler pan with a rack.

Making the Meatloaf

  • In a large bowl, gently combine the ground beef, eggs, almond flour, chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, Italian seasoning, salt, and pepper, mixing thoroughly without over-mixing.
  • Transfer the mixture to the prepared baking dish or sheet and shape it into an oblong loaf, about 8-9 inches long and 4-5 inches wide.

Glaze and Bake

  • In a small bowl, whisk together the sugar-free ketchup, apple cider vinegar, and sugar-free sweetener.
  • Spread half of the glaze evenly over the meatloaf and bake for 30 minutes.
  • Remove the meatloaf from the oven, spread the remaining glaze, and continue baking for another 20-25 minutes until the internal temperature reaches 160°F (71°C).

Serve

  • Let the meatloaf rest for 5-10 minutes before slicing and serving to ensure it is moist and flavorful.

Notes

For best results, avoid over-mixing the meatloaf mixture to ensure a tender texture. Resting the meatloaf after baking is crucial for juicy results. You can serve this meatloaf with a side of mashed cauliflower or steamed green beans for a complete low-carb meal.
