  • 1 ½ lbs lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup uncooked white rice long-grain recommended
  • 2 cups beef broth or chicken broth
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and black pepper to taste
  • ½ cup frozen peas or corn optional
  • ¼ cup fresh parsley or cilantro for garnish, optional

Cooking Steps

  • In a large skillet, cook the ground beef over medium-high heat until browned, then drain excess fat.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic.
  • Stir in uncooked rice, chili powder, and cumin, cooking for 1-2 minutes to toast the rice and bloom the spices.
  • Pour in beef broth and diced tomatoes, bring to a boil, then cover and simmer for 15-20 minutes until rice is tender.
  • If desired, stir in frozen peas or corn during the last 5 minutes of cooking. Season, then let it sit, covered, for 5 minutes before serving, and garnish with fresh herbs.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the spices. If you don't have beef broth, vegetable broth can be used as a substitute.
