  • 1 tablespoon olive oil
  • 1 pound Italian sausage mild, casings removed
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 14.5 ounce diced tomatoes undrained
  • 3 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces penne pasta
  • ½ cup heavy cream optional
  • ½ cup grated Parmesan cheese plus more for serving
  • Fresh parsley chopped (for garnish, optional)

  • Heat olive oil in a large skillet, then add Italian sausage and cook until browned, breaking it up with a spoon; drain excess grease.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic and cook until fragrant.
  • Pour in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper; stir well and bring to a simmer.
  • Add uncooked penne to the skillet, cover, and simmer for 15-20 minutes until the pasta is al dente and liquid is absorbed, stirring occasionally.
  • Remove from heat, stir in heavy cream (if using) and Parmesan cheese, then taste and adjust seasonings; garnish with parsley and serve.

Notes

For a richer sauce, do not skip the heavy cream. If you prefer a spicier dish, use hot Italian sausage. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
