  • 1 lb cooked breakfast sausage, crumbled and drained
  • 6-8 slices bread, cubed about 4 cups
  • 1.5 cups shredded cheddar cheese divided
  • 8 large eggs
  • 2 cups milk (whole or 2%)

Seasoning & Optional

  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.5 cup chopped bell pepper or onion, sautéed Optional

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Spread the cubed bread evenly over the bottom of the prepared baking dish.

Layering

  • Sprinkle the crumbled cooked sausage over the bread, and add sautéed bell pepper or onion if desired.
  • Top the sausage and vegetables with 1 cup of the shredded cheddar cheese.

Egg Mixture & Baking

  • In a large bowl, whisk together eggs, milk, salt, black pepper, and garlic powder until well combined.
  • Pour the egg mixture evenly over the layers in the baking dish, ensuring the bread is saturated.
  • Sprinkle the remaining ½ cup of cheddar cheese over the top.
  • Bake for 40-50 minutes, or until golden brown and a knife inserted into the center comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the egg mixture. This casserole can be assembled the night before and baked in the morning for a quick breakfast. If making ahead, add an extra 5-10 minutes to the bake time.
