  • 1 cup brown or green lentils rinsed
  • 1 large onion chopped
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 2 garlic minced
  • 1 (28-ounce) can crushed tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 2 bay leaves (optional)
  • Fresh parsley or cilantro chopped (for garnish)
  • apple cider vinegar or lemon juice A splash (optional)

  • Chop the onion, dice the carrots and celery, mince the garlic, and rinse the lentils thoroughly.
  • Combine all ingredients (lentils, vegetables, tomatoes, broth, herbs, cumin, and bay leaves if using) in the slow cooker and stir well.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the lentils are tender.
  • Remove the bay leaves, season with salt and pepper, and add a splash of apple cider vinegar or lemon juice if desired before garnishing and serving.

Notes

This soup is even better the next day as the flavors meld. You can adjust the seasoning to your preference.
