  • 2 lbs beef chuck
  • 1 large onion
  • 3 cloves garlic
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 cup beef broth

Spices

  • 1/4 cup chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Other

  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Brown the beef in olive oil in a skillet, then transfer it to your slow cooker.
  • Sauté the chopped onion until softened, then add minced garlic and cook for an additional minute until fragrant.
  • Add the sautéed onion and garlic to the slow cooker with the beef.

Cooking

  • Pour in the crushed tomatoes, diced tomatoes with their liquid, tomato sauce, and beef broth.
  • Stir in all the spices: chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper, mixing everything thoroughly.
  • Cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the beef is tender and the chili has thickened.

Serving

  • Taste and adjust seasonings before serving.

Notes

For a spicier kick, increase the amount of cayenne pepper. This chili freezes well for future meals.
