This hearty crockpot beef roast is a perfect Whole30 compliant meal for busy weeknights. The beef cooks down to be fall-apart tender with flavorful vegetables and a rich broth.

Ingredients
  

Main Ingredients

  • 3-4 pounds Beef Chuck Roast trimmed of excess fat
  • 1 tbsp Olive Oil or Avocado Oil
  • 1 Onion roughly chopped
  • 4-6 cloves Garlic minced
  • 1 pound Carrots peeled and cut into large chunks
  • 3-4 stalks Celery cut into large chunks
  • 1.5 - 2 pounds Yukon Gold or red Potatoes scrubbed and quartered (optional, but highly recommended for Whole30)

Liquid & Seasoning

  • 2 cups Unsalted, Whole30 compliant Beef Broth
  • 2 tbsp Unsweetened Tomato Paste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 2 Bay Leaves
  • Salt and Black Pepper to taste

Instructions
 

Preparation

  • Pat the chuck roast dry and season generously with salt and pepper.
  • Heat oil in a skillet and sear the beef on all sides until a brown crust forms, then set aside.

Cooking

  • In the same skillet, sauté chopped onion until softened, then add minced garlic and cook until fragrant.
  • If you seared the beef, deglaze the skillet with a splash of beef broth, scraping up any browned bits.
  • Place carrots, celery, and potatoes at the bottom of the slow cooker.
  • Place the seared beef on top of the vegetables and pour a mixture of beef broth and tomato paste over everything.
  • Sprinkle dried thyme and rosemary over the roast, and add the bay leaves.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.

Serving

  • Remove bay leaves, then shred the beef directly in the slow cooker or on a cutting board and return to the pot.
  • Serve the shredded beef with the tender vegetables and flavorful cooking liquid.

Notes

For best results, do not skip searing the beef, as it adds significant flavor and a richer crust. Adjust seasoning to your preference, and consider adding a splash of red wine during deglazing if not strictly following Whole30. This dish is great for meal prepping.
