  • 1 box (1 oz) sugar-free instant vanilla pudding mix
  • 2 cups cold milk
  • 1/2 cup sugar-free whipped topping
  • 1 package (5.3 oz) sugar-free vanilla wafers

Preparation

  • Whisk together the pudding mix and cold milk in a medium bowl for 2 minutes until thickened, then let it sit for 5 minutes to set.
  • Gently fold the sugar-free whipped topping into the prepared pudding mixture to add creaminess and lightness.
  • Peel and slice the ripe bananas into 1/4-inch rounds.

Assembly

  • Arrange a single layer of sugar-free vanilla wafers at the bottom of a 9x13 inch serving dish or individual dessert cups.
  • Place a layer of sliced bananas over the wafers.
  • Carefully spoon about one-third of the pudding mixture evenly over the bananas.
  • Repeat the layers of wafers, then bananas, then pudding two more times, ending with a final layer of pudding on top.
  • Cover the dish loosely and refrigerate for at least 4 hours, or ideally overnight, allowing the wafers to soften and flavors to meld.

Serving

  • Before serving, garnish with a few fresh banana slices or a light dusting of cinnamon if desired.

Notes

For best results, allow the pudding to chill overnight to ensure the wafers are fully softened and the flavors are well developed.
