Ingredients

Main Ingredients

  • 1.5 lbs Ground Beef 80/20 lean
  • 4-5 medium Potatoes peeled and thinly sliced
  • 1 large Onion chopped
  • 2 medium Carrots sliced
  • 1 can Cream of Mushroom Soup 10.5 oz
  • 1/2 cup Milk
  • 1.5 cups Shredded Cheddar Cheese
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Olive Oil or Vegetable Oil

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Heat olive oil in a large skillet over medium-high heat, then add ground beef and cook until browned; drain excess grease and set aside.
  • In the same skillet, sauté chopped onion and carrots for 5-7 minutes until the onion is translucent and carrots soften.
  • In a medium bowl, whisk together cream of mushroom soup, milk, garlic powder, onion powder, salt, and black pepper.

Assembly and Baking

  • Spread the cooked ground beef evenly in the prepared baking dish, followed by layers of sliced potatoes, and then the sautéed onion and carrots.
  • Pour the soup mixture evenly over the vegetables, ensuring everything is well coated.
  • Cover the baking dish tightly with aluminum foil and bake for 60 minutes, or until the potatoes are tender.
  • Remove the foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for another 15-20 minutes until the cheese is melted, bubbly, and lightly golden brown.
  • Let the casserole rest for 5-10 minutes before serving to allow the layers to set.

Notes

For a richer flavor, you can use a combination of different cheeses. To save time, you can pre-slice your potatoes and onions.
