Ingredients
  

For the Homestyle Meatloaf:

  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper (optional)
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Meatloaf Glaze:

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

For Creamy Garlic Mashed Potatoes:

  • 2 lbs Russet or Yukon Gold potatoes peeled and quartered
  • 1/2 cup warm milk (whole or 2%)
  • 1/4 cup unsalted butter softened
  • 2 cloves garlic minced or roasted
  • 1/4 cup sour cream or cream cheese (optional)
  • Salt and black pepper to taste
  • Fresh chives or parsley chopped (for garnish, optional)

For Honey-Glazed Carrots:

  • 1 lb carrots peeled and sliced into 1/2-inch thick rounds or sticks
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 1/4 cup water or vegetable broth
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish, optional)

For Garlic Green Beans with Almonds:

  • 1 lb fresh green beans trimmed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/4 cup sliced almonds
  • Salt and black pepper to taste

Instructions
 

Part 1: The Homestyle Meatloaf

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or foil, or use a loaf pan.
  • In a large bowl, gently combine the ground beef, egg, breadcrumbs, milk, onion, green bell pepper (if using), minced garlic, Worcestershire sauce, oregano, salt, and pepper, being careful not to overmix.
  • Form the meat mixture into a loaf shape on the prepared baking sheet or press it into a loaf pan.
  • Whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard in a small bowl to make the glaze.
  • Bake the meatloaf for 45 minutes.
  • Remove the meatloaf, spread the glaze generously over the top, and return to the oven to bake for another 15-20 minutes, or until it reaches an internal temperature of 160°F (71°C).
  • Let the meatloaf rest for 10-15 minutes before slicing to allow the juices to redistribute for a tender and moist loaf.

Part 2: Creamy Garlic Mashed Potatoes

  • Place peeled and quartered potatoes in a large pot, cover with cold water, add salt, and bring to a boil; simmer for 15-20 minutes until fork-tender.
  • Drain the potatoes thoroughly and return them to the hot pot, then mash until mostly smooth.
  • Add warm milk, softened butter, minced garlic, and sour cream/cream cheese (if using), then mash or stir vigorously until smooth and creamy.
  • Season generously with salt and black pepper to taste and keep warm until serving.

Part 3: Honey-Glazed Carrots

  • In a medium skillet, melt butter over medium heat, add sliced carrots, and sauté for 5 minutes until slightly softened.
  • Pour in honey and water/broth, stirring to coat the carrots.
  • Bring to a gentle simmer, then reduce heat to low, cover, and cook for 8-10 minutes until carrots are tender-crisp and the liquid has reduced to a glaze.
  • Season with salt and black pepper, and garnish with fresh parsley if desired.

Part 4: Garlic Green Beans with Almonds

  • Optionally, blanch trimmed green beans in boiling salted water for 2-3 minutes, then drain and plunge into ice water; drain thoroughly.
  • Heat olive oil in a large skillet over medium heat, add sliced almonds, and cook for 2-3 minutes until lightly golden and fragrant, then remove and set aside.
  • Add green beans to the same skillet and sauté for 5-7 minutes until tender-crisp.
  • Stir in minced garlic and cook for another minute until fragrant, being careful not to burn.
  • Return toasted almonds to the skillet, season with salt and black pepper, and add a squeeze of fresh lemon juice if desired.
