  • 1 pound smoked sausage sliced into 1/2-inch rounds
  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 1 medium red onion chopped
  • 1 large bell pepper any color, chopped

Honey Garlic Sauce

  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 3 cloves garlic minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

For Roasting

  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, cornstarch, and water. Set aside.
  • In a large bowl, toss the sliced sausage, diced sweet potatoes, chopped red onion, and chopped bell pepper with olive oil, salt, and black pepper until evenly coated.

Cooking

  • Spread the sausage and vegetable mixture in a single layer on the prepared baking sheet. Roast for 15 minutes.
  • Remove the baking sheet from the oven. Drizzle the honey garlic sauce over the mixture and toss to coat everything. Return to the oven and roast for another 15-20 minutes, or until the sweet potatoes are tender and the sauce has thickened.

Serving

  • Serve hot, garnished with fresh parsley if desired. This dish can be enjoyed on its own or with a side of rice or quinoa.

Notes

For a spicier kick, add a pinch of red pepper flakes to the honey garlic sauce. You can also customize the vegetables based on what you have on hand, such as broccoli florets or zucchini. Ensure the sweet potatoes are cut into uniform pieces for even cooking.
