  • 1.5-2 pounds boneless, skinless chicken breasts or thighs
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon whole grain mustard optional
  • 2-3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1/2 teaspoon smoked paprika optional
  • Fresh parsley or chives optional, for garnish

Cooking Steps

  • Preheat oven to 400°F (200°C) and prepare a baking dish or sheet with parchment paper.
  • Pat the chicken dry and season both sides with salt, pepper, and smoked paprika (if using).
  • In a medium bowl, whisk together the honey, Dijon mustard, whole grain mustard (if using), minced garlic, and olive oil.
  • Place the seasoned chicken in the baking dish, pour about ¾ of the honey mustard sauce over it, and reserve the remaining sauce.
  • Bake in the preheated oven for 20-25 minutes.
  • Remove the chicken from the oven, brush with the reserved sauce, and bake for another 5-10 minutes until cooked through and caramelized.
  • Remove from the oven and let the chicken rest for 5 minutes before serving; garnish with fresh parsley or chives if desired.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) for food safety. The resting period helps keep the chicken juicy.
