  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1/4 cup honey
  • 2 tablespoons sriracha or more, to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Mini skewers if using wooden, soak in water for 30 minutes
  • Fresh cilantro, chopped for garnish
  • Sesame seeds for garnish

Instructions
 

Preparation

  • Whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger in a bowl to create the marinade.
  • Add chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Cooking

  • Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat. If baking, line a baking sheet with parchment paper.
  • Thread the marinated chicken pieces onto the mini skewers.
  • If baking, arrange skewers on the prepared baking sheet. If grilling, brush grill grates with olive oil.
  • Cook for 12-15 minutes, flipping halfway through, until chicken cooks to 165°F (74°C) and the glaze caramelizes slightly.

Serving

  • Garnish with chopped fresh cilantro and a sprinkle of sesame seeds before serving.

Notes

For extra crispiness, broil the skewers for the last 2-3 minutes, watching carefully to prevent burning. Serve with rice or a fresh salad for a complete meal.
