  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup small pasta (orzo, ditalini)
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cups fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions
 

Preparation

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  • Add pasta and cooked chicken. Cook according to pasta package directions until al dente.
  • Stir in fresh spinach and cook until wilted.
  • Season with salt and pepper to taste.
  • Ladle into bowls, garnish with grated Parmesan cheese and fresh parsley, and serve hot.

Notes

For an extra immune boost, add a pinch of turmeric or ginger powder with the garlic. You can also customize by adding other vegetables like peas or corn.
