  • 1 box Jiffy corn muffin mix
  • 15 ounces whole kernel corn, undrained
  • 15 ounces cream-style corn
  • 1 cup sour cream
  • 1/2 cup melted butter

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the Jiffy corn muffin mix, whole kernel corn (undrained), cream-style corn, sour cream, and melted butter. Mix until just combined.

Cooking

  • Pour the mixture into the prepared baking dish and bake for 45-55 minutes, or until the casserole is golden brown and set.

Serving

  • Remove from the oven and let it cool for a few minutes before serving warm.

Notes

For an extra touch, you can add shredded cheddar cheese to the top during the last 10 minutes of baking. You can also add chopped jalapeños for a little kick!
