Ingredients
  

Chicken

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch chunks

Vegetables

  • 1 lb asparagus trimmed and cut into 2-inch pieces
  • 1 pint cherry tomatoes halved
  • 1 red onion thinly sliced

Aromatics

  • 3 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped

Liquid

  • 1/4 cup dry white wine or chicken broth

Citrus

  • 1 lemon zest and juice of

Seasoning

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional

  • Feta cheese crumbles for topping

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  • Combine the chicken, asparagus, cherry tomatoes, and red onion in a large bowl.

Seasoning and Baking

  • Add garlic, parsley, dill, olive oil, lemon zest and juice, oregano, salt, and pepper to the bowl, then toss to coat.
  • Pour white wine or chicken broth into the baking dish, then spread the chicken and vegetable mixture evenly.
  • Bake for 25-30 minutes, or until the chicken is cooked through and vegetables are tender-crisp.
  • Optionally, sprinkle with feta cheese during the last 5 minutes of baking.
  • Remove from the oven and let it rest for 5 minutes before serving.

Notes

For an extra burst of flavor, marinate the chicken in the lemon-herb mixture for at least 30 minutes before baking. You can also add other vegetables like bell peppers or zucchini for variety.
