  • 1 lb chicken tenderloins or thinly sliced chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp dried Italian seasoning or a mix of dried thyme, rosemary, and oregano
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1 lb mixed vegetables (e.g., zucchini, cherry tomatoes, bell peppers, red onion), chopped

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine the chicken tenderloins with olive oil, lemon juice, Italian seasoning, garlic powder, salt, and pepper; toss to coat evenly.
  • Add the chopped mixed vegetables to the same bowl and toss them with the seasoned chicken until everything is well coated.
  • Spread the chicken and vegetables in a single layer on the prepared baking sheet.
  • Roast for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender-crisp.

Notes

For extra flavor, squeeze fresh lemon juice over the roasted chicken and vegetables before serving. You can customize the vegetables based on what's in season or your preferences, such as broccoli florets, asparagus, or sweet potatoes.
