  • 4 6-ounce salmon fillets skin-on or skin-off
  • 1 tablespoon olive oil
  • lemon thinly sliced, plus extra for serving
  • 2 cloves garlic minced
  • 2 tablespoons fresh dill chopped (or parsley/cilantro)
  • 1 pound asparagus trimmed
  • Salt and freshly ground black pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pat the salmon fillets dry and season both sides with salt and pepper.
  • In a small bowl, combine olive oil and minced garlic.
  • Arrange salmon on the baking sheet and top each fillet with lemon slices.
  • Scatter trimmed asparagus around the salmon, then drizzle the oil and garlic mixture over both.
  • Sprinkle fresh dill over the salmon and asparagus.

Baking

  • Bake for 12-18 minutes, or until the salmon flakes easily and asparagus is tender-crisp.
  • Remove from oven and serve immediately with extra fresh lemon wedges.

Notes

Cooking time for salmon will vary based on thickness; aim for an internal temperature of 145°F (63°C).
